My Friday Morning Pancake Recipe

Ok everyone, here is the best pancake recipe ever! I make these every Friday morning, adding different fruit each week. Frozen wild blueberries are my current favorite, though my kids seemed to enjoy the apple-cinnamon version a bit more. Experiment for yourself, and enjoy!
Friday Morning Pancakes:
1 cup flour
1 Tbsp sugar
2 tsp baking powder
¼ tsp salt
1 egg, beaten
1 cup milk
2 Tbsp vegetable oil
- In a medium bowl, mix together the dry ingredients (flour, sugar, baking powder, and salt).
- In a smaller bowl, beat the egg, milk and vegetable oil together.
- Add the egg mixture to the dry mixture. Expect the batter to be lumpy.
- Spoon out the pancakes into a lightly greased skillet. Flip when bubbles start to form in the middle.
