My Friday Morning Pancake Recipe

Ok everyone, here is the best pancake recipe ever! I make these every Friday morning, adding different fruit each week. Frozen wild blueberries are my current favorite, though my kids seemed to enjoy the apple-cinnamon version a bit more. Experiment for yourself, and enjoy!

Friday Morning Pancakes:

1 cup flour

1 Tbsp sugar

2 tsp baking powder

¼ tsp salt

1 egg, beaten

1 cup milk

2 Tbsp vegetable oil

  1. In a medium bowl, mix together the dry ingredients (flour, sugar, baking powder, and salt).
  2. In a smaller bowl, beat the egg, milk and vegetable oil together.
  3. Add the egg mixture to the dry mixture. Expect the batter to be lumpy.
  4. Spoon out the pancakes into a lightly greased skillet. Flip when bubbles start to form in the middle.
