Easy Dinner – Tuscan Soup!

Ah, it’s perfect weather for a cozy sweater and some soup. If you’re not sure what to make for dinner tonight, try this recipe for Tuscan soup. It’s simple, doesn’t take long to prepare, and is absolutely delicious. Perfect for a cool fall evening, this soup is something my whole family enjoys. I like to serve it with Rosemary Olive Oil Bread (which you can find in the bakery section of most grocery stores) and I usually double the recipe so we have lunch the next day.
Tuscan Soup
1 small onion, chopped
¾ cup sliced carrots
2 Tbsp Extra Virgin Olive Oil
2-14.5 oz cans chicken broth
1 cup water
¾ tsp salt
¼ tsp pepper
1 can Great Northern Beans
2/3 cup pasta (a smaller, miniature variety)
2-3 cups fresh, sliced spinach
- In a small saucepan, sauté the onion, carrots, and olive oil until the veggies are tender. Add the chicken broth, water, salt and pepper. Bring to a boil. Stir in the beans and pasta; return to a boil.
- Reduce heat, cover and simmer for 15 minutes.
- Add the spinach and simmer for another two or three minutes, until spinach is heated.
