Peanut Butter Cookies – Soft and Chewy

I’ve spent quite a while looking for the right peanut butter cookie recipe. Mine seem to always be too crunchy or too crisp, and I’ve been searching for a recipe that produces soft, chewy cookies. Well, I have finally found it. I can’t believe how simple these cookies are (and you don’t have to chill the dough, which is something I always forget about) – and they are absolutely yummy.
Peanut Butter Cookies
½ cup sugar
½ cup packed brown sugar (light or dark – I usually use light)
½ cup butter (1 stick)
1 egg
1 ¼ cup flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
- Preheat oven to 375 degrees.
- Beat together the butter, sugar, brown sugar, peanut butter, and egg.
- Stir in the dry ingredients.
- Bake 9-10 minutes.
