Corn Casserole – Simple but Delicious

This is a recipe that I had almost forgotten about – until my relatives asked me to make it for Thanksgiving. It’s wonderful as a side dish with chicken, meatloaf, pork chops… or any other comfort food. This is also very easy to double if you have a large crowd, so keep this in mind for the holidays!

Corn Casserole

1 can whole kernel corn

1 can cream corn

1 box Jiffy Corn Muffin mix

1 egg

1 stick butter

½ cup sour cream

½ cup shredded cheddar cheese

  1. Preheat your oven to 350 degrees.
  2. Mix all of the above ingredients.
  3. Bake in a 9 X 9 casserole (or Pyrex) dish for 45 – 50 minutes, until it smells good and is golden brown. (When doubling the recipe, bake for 1 hour – 1 hour and 10 minutes.
