Twice Baked Potatoes

What could be better than a loaded baked potato? A twice baked potato. They are the perfect easy dinner for this winter, and are something that the whole family will enjoy.

Here is a great recipe for Twice Baked Potatoes that was passed on by my best friend. When I made these for my husband and kids, they loved it!

Twice Baked Potatoes:

4 large potatoes

¼ to ½ cup milk

¼ cup butter, softened

¼ tsp salt

Dash of pepper

1 cup shredded cheese

1 Tbsp chives

Bacon bits or crumbled bacon (optional)

  1. Bake the potatoes at 375 for 1 hour and 15 minutes.
  2. Let them cool, then cut them in half (lengthwise).
  3. Scoop out potato pulp (leaving skins intact) and put in a mixing bowl.
  4. Add other ingredients and beat with mixer.
  5. Stuff loaded baked potato pulp into the potato skins.
  6. Bake at 400F for 20 min.
  7. If desired, top with sour cream or additional toppings.
