Twice Baked Potatoes

What could be better than a loaded baked potato? A twice baked potato. They are the perfect easy dinner for this winter, and are something that the whole family will enjoy.
Here is a great recipe for Twice Baked Potatoes that was passed on by my best friend. When I made these for my husband and kids, they loved it!
Twice Baked Potatoes:
4 large potatoes
¼ to ½ cup milk
¼ cup butter, softened
¼ tsp salt
Dash of pepper
1 cup shredded cheese
1 Tbsp chives
Bacon bits or crumbled bacon (optional)
- Bake the potatoes at 375 for 1 hour and 15 minutes.
- Let them cool, then cut them in half (lengthwise).
- Scoop out potato pulp (leaving skins intact) and put in a mixing bowl.
- Add other ingredients and beat with mixer.
- Stuff loaded baked potato pulp into the potato skins.
- Bake at 400F for 20 min.
- If desired, top with sour cream or additional toppings.
