<p>This is the best breakfast casserole I&#8217;ve ever had! This recipe is from a friend, which she modified to make some healthier changes. It takes a little extra time, but it&#8217;s well worth it – and perfect if you&#8217;re hosting brunch or bringing a dish to a breakfast.</p>
<p>Egg, Sausage and Sun Dried Tomato Casserole</p>
<p>1 lb Italian sausage (casings removed)</p>
<p>½ cup diced green onions</p>
<p>2 garlic cloves, minced (or 2 tsp minced garlic)</p>
<p>½ cup sun-dried tomatoes (oil packed or dry packed)</p>
<p>4 Tbsp chopped Italian parsley</p>
<p>8 eggs</p>
<p>1 cup fat free half and half</p>
<p>1 cup low fat ricotta cheese</p>
<p>2 cups grated mozzarella cheese</p>
<p>½ cup fresh mushrooms (if desiered)</p>
<ol>
<li>Preheat oven to 375F. Grease a 9 X 13 baking dish.</li>
<li>Sauté sausage over medium heat until cooked (about ten minutes), breaking up into smaller pieces as you cook.</li>
<li>Add green onions and garlic – sauté another three minutes.</li>
<li>Add the sun-dried tomatoes and parsley – sauté one minute.</li>
<li>Spread sausage mixture in baking dish.</li>
<li>Whisk the eggs, half and half, ricotta, and 1 ½ cup mozzarella cheese. Pour over the sausage mixture.</li>
<li>Sprinkle the remaining cheese and parsley on top.</li>
<li>Bake about 30 minutes, until knife comes out clean.</li>
<li>Let stand 5 minutes before serving.</li>
</ol>

<p>Ok everyone, here is the best pancake recipe ever!  I make these every Friday morning, adding different fruit each week.  Frozen wild blueberries are my current favorite, though my kids seemed to enjoy the apple-cinnamon version a bit more.  Experiment for yourself, and enjoy!</p>
<p>Friday Morning Pancakes:</p>
<p>1 cup flour</p>
<p>1 Tbsp sugar</p>
<p>2 tsp baking powder</p>
<p>¼ tsp salt</p>
<p>1 egg, beaten</p>
<p>1 cup milk</p>
<p>2 Tbsp vegetable oil</p>
<ol>
<li>In a medium bowl, mix together the dry ingredients (flour, sugar, baking powder, and salt).</li>
<li>In a smaller bowl, beat the egg, milk and vegetable oil together.</li>
<li>Add the egg mixture to the dry mixture. Expect the batter to be lumpy.</li>
<li>Spoon out the pancakes into a lightly greased skillet. Flip when bubbles start to form in the middle.</li>
</ol>

		</p><p>Have you ever made your own jam?  I haven&#8217;t, but I think I&#8217;m going to try it.  I really like Simple Mom&#8217;s blog, and here is one more reason why.   With the change of seasons, I often feel inspired to take on new projects and try new things, which is why I enjoyed reading this post on making jam.  Personally, I have no idea how to make jam &#8211; although I&#8217;d love to learn.  My mother-in-law makes some pretty awesome cherry preserves, so I know how good the homemade stuff is!  My oldest daughter think that PB &amp; J is the best meal on the planet, so I know that homemade jam would certainly be eaten around here.</p>
<p>If you try this out, let me know what fruits you use!  Fall is so great for different flavors&#8230; can you think of some good falls jams?</p>
