<p>I&#8217;ve made this twice for my family so far, and it&#8217;s a new favorite around here. We absolutely love this dinner, and it&#8217;s both easy and delicious. This is also great for entertaining, because it turns our rather impressive! Thanks to Heather at <a href="http://www.home-ec101.com/oven-baked-chimichangas-sure-why-not/">Home Ec 101</a> for this delicious dish.</p>
<p>Chimichangas:</p>
<p>1 – 2lbs round steak</p>
<p>1 cup salsa</p>
<p>1 cup grated cheese</p>
<p>4 (or more) burrito sized flour tortillas</p>
<p>1 Tbsp olive oil</p>
<p>Toppings – Salsa, grated cheese, sour cream, guacamole, fresh cilantro, shredded lettuce</p>
<ol>
<li>Preheat oven to 375F.</li>
<li>Place round steak in crock pot and cover with salsa. Cook on low for 4 – 6 hours. The steak should be tender when removed. Remove the steak, and shred with a fork.</li>
<li>On a clean baking sheet, place ¼ beef mixture and approximately ¼ cup of shredded cheese on each of the flour tortillas.</li>
<li>Fold and lightly brush with olive oil.</li>
<li>Bake for 10 – 15 minutes until the chimichangas are golden.</li>
<li>Top with desired toppings.</li>
</ol>
<p>This also works well with Spanish rice and black beans for side dishes.</p>

		</p><p>Time to stop writing &#8211; and start baking!  Thanks to Heather from Home Ec 101 for this mouth watering recipe.   I have never tried to make cinnamon rolls at home, but now that I have this recipe in hand I don&#8217;t think I can pass it up!  Wouldn&#8217;t these just be the perfect breakfast on Saturday morning this fall?  I think so.  Or a Friday morning.  Or a Thursday afternoon during the kids&#8217; nap.  Ok, I need to stop!</p>
